Lazy Day Cobbler

This is a treasured dessert recipe I acquired from my sweet mother-in-law, Eva. This was her go-to dessert at family barbecues, Sunday lunches or potlucks. It is another simple and easy throw-together dish that I have once again selfishly held to myself as a "family secret". I am pleased to share this little gem of a dish with each of you. 

Ingredients

1 1/2 cup sugar (reserve 1/2 cup for later)
1 cup AP (all purpose) flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 stick of butter
3/4 cup milk
1 can of peaches (or any fruit you prefer)

Directions

Melt butter in baking dish (smaller than 9 x 13) Mix dry ingredients and milk until smooth. Pour over melted butter in baking dish. Do NOT stir.
add fruit and liquid in can. Add reserved 1/2 cup sugar over the top.

Bake @ 350 degrees for 30 minutes. You can sprinkle cinnamon over top along with sugar if desired as well. Enjoy with a scoop of ice cream!
